Peppers
Peppers are nutritional powerhouses, particularly when ripe (red, orange or yellow):
Vitamin C: Red bell peppers contain nearly three times more Vitamin C than an orange.
Vitamin A: High in beta- carotene, which the body converts into Vitamin A for eye and skin health.
Antioxidants: Rich in quercetin, luteolin, and capsanthin (which gives red peppers their colour).
